Easy Versatile Dinner

1/4 cup chicken stock
1/2 small onion
3 tbsp dijon mustard
1 tbsp thyme
2 chicken breasts

Combine all ingredients, except chicken, in a skillet, over medium heat. When ingredients are combined, add the chicken. Cover the pan and reduce the heat. Poach for 20 minutes.

Now for the best part. Substitution. Try veal stock. Try red onions or shallots. Try sun dried tomato mustard, or ginger wasabi mustard. Try basil, oregano, or lemon grass. You get the idea!
